Chef Joe Fish has more than 25 years experience in the industry as well as two degrees. He earned his bachelors in Food Science & Nutrition from Kent State University and went on to graduate with Honors from the main campus of The Culinary Institute of America (CIA), Hyde Park, New York.  Joe was the only student in his class selected to complete an externship from the CIA at the world famous Savoy Hotel in London. The Savoy was at that time under the direction of the renowned Chef Anton Edelmann, later replaced by legendary Gordon Ramsey.  While at the Savoy, Chef Fish was on a brigade of chefs who had the great honor of preparing breakfast and lunch for the Royal Family including the late Princess Diana.

 

Before returning to the CIA Joe traveled extensively throughout Europe visiting 17 countries and participating in Guest Chef work in Paris, Amsterdam, Berlin and Munich.  Joe lived and worked in Manhattan New York for 12 years. During his time in New York City Chef Fish worked with the celebrated Alfred Portale, Chef and Owner of the well known Gotham Bar & Grill. This restaurant was ground breaking with its architectural art of food and plate presentation. Chef Fish has worked in venues ranging from 4 Star New York Times rated restaurants, Zagat rated historic hotels to Corporate Dining facilities including time spent at the World Trade Center.

  1. I visited the Webster Market Market today in search of my regular vegan/raw vendor. They are no longer there. However, I did find the Chef Case. I really liked the quinoa and sweet potato salad. What brought you and your family to Dayton?

    • Thanks for your comment! I am originally from Dayton, after graduating from the CIA I spent time abroad and then many years cooking in New York City. I met my Wife while visiting Dayton from Manhattan for our 15 year High School reunion. We left New York after the birth of our Daughter, we wanted her to have what we had growing up in Dayton rather than the urban jungle. My Mother also lives in Centerville. Thanks for asking!
